Museums: I'm partial to the Rijksmuseum and Het Schip (Housing/New Amsterdam architecture). The Van Gogh museum is wonderfully curated but buy tickets in advance.
Rent a Bike and ride down the Amstel toward the Riekermolen (or all the way to Ouderkerk if you have the stamina). You might find some wallabies along the way...
From April through October you can take the historic trolleys around town.
